I am so excited to see Crazy Pizza opened in the new T-Market at Toranomon Hills. It was hard to decide and it’s fabulous that the shop will do half and half so the decision making isn’t as stressful as it could be. The crust is thin and light.

The seasonal pizza is seri or water dropwort, sometimes also called water celery. What I love about this green is that the roots are also enjoyed. Usually I have it as tempura with soba. My first time to have it on pizza along with sausage, smoked cheese, and a hint of lemon zested over the top brightening the greens. Shirasu, baby sardines that have been boiled, from @nanadaime_yamari in Wakayama, is generously heaped onto the pizza with anchovy paste and karasumi bottarga roe. Luxurious and rich in umami and a nice contrast to the seri.

Staff are very friendly and attentive. The counter seats overlook the kitchen so it’s fun to watch the action of the pizzas being assembled, baked, and cut.

T-Market is in the basement of the new Toranomon Hills building and the restaurant gets busy at the noon lunch hour.
