
Inari zushi is sushi made with deep-fried tōfu. Often these are packets that are stuffed with vinegared rice. There is a new style at #Ginza #Matsuya #depachika called at a shop called @tsukijitenko that makes inari zushi from @matsuyama_age. Matsuyama agé is fried tōfu that is dried so it is shelf stable. The fried tōfu when added to soups or liquids becomes soft.

The inari zushi at Tsukiji Tenko has a delicate fried tōfu covering over seasoned rice. The shop sells a six-pack with the following flavors:
plain
truffle
tomato with dried shrimp and basil
curry with smoked daikon iburi gakko pickles (our favorite)
chirimen sanshō
beef and burdock

We loved the variety of flavors. The perfect light lunch or snack after walking around the city. There’s an eat-in space on the rooftop if you can’t wait.
