Tsukemono pickles

I love the pickles at Tsukiji Nakagawaya tsukemono shop. Nakagawaya has an amazing space near the entrance to the market – and across the aisle from Sushi Zanmai. There is a colorful selection of Japanese pickles including:

misozuké – miso

nukazuké – rice bran

Narazuké – sake lees

bettarazuké – daikon pickled in kōji, a Tokyo style

iburigakko – a smoked daikon pickle from the Tōhoku region Akita

Zaasai pickles pair well with saké.

There are also seasonal pickles that change throughout the year.

Here is zaasai (Brassica juncea) pickle that is lovely cut a bit thick. It has a silky texture and is lovely with saké. Also cucumber and eggplant nukazuké rice bran pickles.
