
Miso katsu is a local dish to Nagoya. Fried cutlets topped with a sweet miso dressing. The local style of miso in Nagoya is called Hatchō and is a dark and intense miso. The katsu here is made with Nagoya Kochin chicken. But there are many restaurants also serving miso katsu with pork.

The other dishes here are kishimen udon noodles with chicken and oyakodon – mother and child chicken and eggs over rice. Nagoya is famous for a local chicken called Nagoya Kochin.

Delighted to discover Tori Gotetsu, produced by the 8th-generation of Tamahide in Ningyōchō in Tokyo. Tori Gotetsu is conveniently located at Nagoya Station in the JR Central Towers on the 13th floor. We love dining at these restaurant floors because there is a variety of food to choose from. We walk around until we see what speaks to us. The Japan Rail (JR) Central Towers is on the north side of the station and is connected to the station so no going outside.

The original Tamahide (which I wrote about in my book, Food Sake Tokyo) is under reconstruction at the moment. So it was a special treat to have it in Nagoya.
